Description
As we near the end of the year – this classic Colombian coffee had to feature in the limited release lineup. The lot is produced by ASMUCAFE – an organisation of women farmers in El Tambo – a municipality within Cauca, Colombia.
The mission of ASMUCAFE is to improve the quality of life for the families of members through coffee farming – using coffee to contribute positively to the community.
The lot undergoes a slightly unusual double fermentation during processing, where cherries are loaded into hoppers for 14 hours, before depulping occurs and then traditional open fermentation begins.
This leads to a very balanced cup with a great mouthfeel. Juicy berry acidity gives way to toffee and subtle cacao for an excellent brew during the end of year madness.
