It's always an exciting time of year for coffee nerds when fresh crop Ethiopians arrive in Australia. The birthplace of coffee is home to some of the most unique flavour profiles – and the country is quite often the catalyst for people to start their specialty coffee journey.
As is often the case with Ethiopian coffee – this lot is traceable to the Washing Station. Gizat Mill services around 350 smallholder farmers, who deliver ripe cherries to the station. The cherries are graded before being fermented for 36-72 hours, washed and then dried until the desired moisture content is reached.
As a landlocked country, there are often delays with the arrival of Ethiopian coffees – which tend to land anywhere from mid year onwards. I'm excited to share this coffee with you, with vibrant citrus tones that make this the perfect coffee for spring.
