Description
After loving the last release from Fazenda do Cruzeiro we decided to follow it up with another of their fabulous coffees! This time a peaberry, so you will probably notice that the beans are smaller and rounder.
Generally two coffee beans grow in each coffee cherry, so they end up with one curved side and one flat side. With a peaberry, just one seed grows inside the cherry, so it curves and becomes more rounded in shape. It is believed that the increased surface area in contact with the fruit leads to more sweetness in the cup.
The peaberries are sorted and separated from the rest of the beans as their unique shape will cause them to roast differently and taste different to their twin friends. For those of you who had last month’s release, you will probably notice more sweetness and complexity from this coffee in spite of it being from the exact same coffee trees, mill and processing.
