Description
Ivan Ribeiro is the owner of Fazenda do Cruzeiro - a farm which is part of the Sancoffee cooperative. We actually met Henrique, the president of the Sancoffee coop, a couple of years back at the Melbourne International Coffee Expo. The Sancoffee producers are constantly trialling new ways to process coffee in order to showcase its potential.
Brazil is rich in coffee history, and the farm this coffee is from is no exception - Fazenda do Cruzeiro was established over a century ago in 1923! These days coffees are picked both using a mechanical harvester, and by hand as coffee cherries ripen at different rates.
Once this coffee is harvested, it is fermented anaerobically (without air) before being laid on cement patios to dry with the coffee fruit still attached. This extra fermentation leads to more complex flavour development. While Brazil is normally known for heavy bodied low-acid coffees, it is exciting to find coffees which offer something a little more unique in the cup.

Coffee is roasted fresh and shipped too fresh to drink. It should arrive just as it's ready to be brewed! Coffee is best consumed between 7-30 days after the roast date on the bag.
